Expedition Recipe’s – Pancakes, Peanut Butter & Pasta
Meal planning is a crucial part of preparing for a Duke of Edinburgh expedition. When you’re out in the rugged Scottish landscape, far from the comforts of home, what you eat becomes more than just sustenance—it’s the fuel that powers you through challenging terrains and long days on expedition. A well-thought-out meal plan can make all the difference in keeping your energy levels steady and your spirits high.

Breakfast – Pancakes
Pancakes are the perfect expedition breakfast – They are warm, quick to cook, fill you up and if there are any left, you can save them for a snack throughout the day.
Breakfast Pancakes What You Need:
- Ready-made Pancake mixture (Just add Water)
- Water
- Any toppings of your choice: Jam, Honey, Sugar, Chocolate Spread
- Trangia Stove & Gas
- Small Camping pan
- Spork/ Eating utensil
Directions:
- Make pancake mixture as per the instructions on the Pancake Mix. Make sure you buy a ‘Just Add Water’ mix so you don’t need to carry milk with you – milk is extra unnecessary weight, and may go off!
- Heat your triangia stove and use a small amount of oil – we use spray oil as it is small and light to carry. However you could pre-pack a small amount of cooking oil into a small bottle/ container.
- Once your oil is heated, add a small amount of pancake mix to the pan.
- You’ll start to see small bubbles forming on the mixture, this means its ready to flip.
- Flip your pancake, and cook until both sides are golden brown
- Continue this process until you have used all of your mixture
- Add your toppings & Enjoy!

Lunch – Peanut Butter & Jam Wraps
Peanut Butter & Jam Wraps is sometimes a controversial one, but it’s my personal favourite. This lightweight, filling lunch is quick and easy to make and keeps you going all day. The Peanut Butter is a good source of Protein which keeps you fuller for longer and is a slow release energy- keeping you going until dinner time- whilst the sugar from the jam gives you that quick burst of energy you need to keep you going.
The wraps are lightweight and flat, meaning they are easy to pack and will last the duration of your expedition.
What you need:
- Peanut Butter (Pre-packed into a small container)
- Jam (Pre-packed into a small container)
- Tortilla Wraps (Resealable Packet)
- Spork/Knife
Directions:
- Spread the Peanut Butter on one half of the Tortilla Wrap
- Spread the Jam on the other half of the Tortilla Wrap
- Roll & Enjoy!

Dinner – Chorizo Pasta
The most popular dish I have seen on expedition is Chorizo Pasta, it brings home warmth and good carbs. If you are planning on having Chorizo Pasta as your first expedition dinner, you could pre-chop some vegetables to add some extra nutrients – The container you pack the veggies in, doubles up then doubles up as a lunch box or bowl for the rest of your expedition.
What you need:
- Quick Cook Pasta (Pre-portioned)
- Chorizo
- Tomato-Based Pasta Sauce Sachet
- Trangia & Gas
- 2x Pots
- Spork/ Eating Utensil
Directions:
- Heat a large pot of water on the Trangia, when small bubbles appear, add your pasta and stir occasionally.
- Whilst the Pasta is cooking, chop the Chorizo
- Once the Pasta is soft, drain excess water and add the sachet of Pasta Sauce and Chorizo
- Cook for a few minutes until the sauce is warmed through then enjoy!
